Peaches and Cream Cookies

Peaches are in season, my friends! And that means that it’s time for a peachy recipe. These fresh peaches and cream cookies are so wonderful! They are so lovely and soft, and the fresh peach chunks are wonderfully bright! With a glass of ice-cold milk, they are perfection!

Fresh Peaches and Cream Cookies:
Yield: 24 Cookies

2 ¼ cups all-purpose flour
¾ tsp baking soda
½ tsp salt
1 tsp cinnamon
1 cup butter, softened
½ cup white sugar
½ cup brown sugar, firmly packed
1 egg
1 tsp vanilla extract
1 ¼ cup fresh diced peaches (skin removed)

½ cup powdered sugar
1-2 tbsp cream (enough to make a drizzle consistency)
¼ tsp vanilla extract

1. Preheat oven to 350 degrees. In a large bowl, combine flour, baking soda, salt and cinnamon. Stir together and set aside.
2. Using a sharp knife, remove the skin from peaches and cut into small chunks. Place the diced peaches on a paper towel to absorb some of the liquid, and set aside.

3. In a large bowl, cream together butter and both sugars until light and fluffy, about 3 minutes. Add egg and vanilla, beat until combined. Add flour mixture and beat on low speed until well incorporated. Gently fold in the diced peaches.

4. Use a cookie scoop or tablespoon, drop in rounded spoonfuls on lightly greased cookie sheets, leaving plenty of room between cookies to allow for some spreading. Bake for about 10-12 minutes until light golden brown. Cool about 1 minute on cookie sheets and then transfer to wire racks to cool completely.

5. Mix together the powdered sugar, cream and vanilla until smooth. Drizzle lightly over the cookies.

6. Serve with a cold glass of milk and enjoy!

Mmmmmmm. So good, you must make some! There's nothing more wonderful than baking goodies on a long weekend afternoon, and peaches are in season so you've got a great excuse (as if you needed one!)

In other news.... WE GOT A KITTEN. Her name is Olive, and she is half bengal, half tabby. I am so in love!

Seriously, I am never going to get anything productive done ever again, because all I want to do all day is snuggle this little ball of warm, furry love.  Even the boyfriend adores her, and he "doesn't even like cats" ... I think he's a convert.

Don't worry, Doug. We haven't forgotten you ;)

A video of Doug the Pug

Doug the Pug…

I have to share this, because it makes me scream out laughing every time it happens… Meet Doug, my very “special” fur-baby. His new favourite game is to throw his most beloved toy under the coffee table, and then scream about it until someone yanks it out.

I could honestly do a weekly feature on this dog, he does that much ridiculous stuff. Would that be weird? Is that like those annoying people who dominate your instagram feed with pictures of their babies? I don't know... Perhaps he'll make the occasional appearance on Drawings Under the Table. Like a mascot! Perfect.

Got a weird dog? cat? ferret? goldfish? Tell me about 'em!

New Tattoo & A New Hairdo

Since I find myself in a new city, at a new school, and in a new house… Why not get a new tattoo and a new hairdo to seal the deal!? Change can be frightening, but when you throw yourself into it and embrace the newness with an open heart and an open mind, it can be really exciting and rewarding.

I caught myself feeling pretty cheerful about my lovely new life today, so I took a few shameless selfies to share! I’ve been a redhead before, but this red is a bit more daring than I’m used to. I love it!

As for my new ink, I gave this change a lot of thought before actually going through with it. I finally came up with this design and I am really happy with it. One bird for each of my immediate family members to signify that I never have to fly solo. The placement of the tattoo is meaningful too – on my foot because my family is my foundation in life. No matter how rocky things get I can always count on them to be a solid and grounding influence.

Thanks for sharing in these exciting changes with me!! It’s so nice to be able to share all of this on my little corner of the web, and with all of you lovely people. I’m so excited to see what else is in store for me as I stumble down this new path my life is taking.

* If you like my tattoo, feel free to draw inspiration from the idea but please do not copy it exactly. I worked very hard with my tattoo artist to make sure that I ended up with a unique and meaningful piece. Make sure you do the same, so that when someone asks you “Where did that idea come from?” you don’t have to say “Some girl’s blog…” ;)
