The Perfect Oatmeal Raisin Cookie

This is a recipe for the best oatmeal raisin cookies I’ve ever had. With all the fancy-pants cookies out there, sometimes you just need to get back to basics with good, old-fashioned oatmeal perfection! These little treats are the perfect combination of salty, sweet, chewy, and crunchy… A good, honest comfort cookie!

-       1 cup softened butter
-       1 ½ cups packed brown sugar
-       2 eggs
-       1 1/3 cup flour
-       2 cups quick-cooking oats
-       1 tsp baking soda
-       ½ tsp salt
-       2 cups raisins (or chocolate chips if you’re not a raisin fan!)

-       Cream together butter and sugar
-       Stir in eggs
-       Add flour, oats, baking soda, and salt – stir till mixed
-       Stir in raisins or chocolate chips
-       Drop by tablespoonful onto lightly greased cookie sheet
-       Bake at 350F for 8 minutes (for chewy cookies)
